The front of house freezer:
Remove the rear Condenser Filter. Clean any heavy coating of dust with a soft CLEAN brush or vacuum cleaner finishing by final cleaning under warm running water brushing with your hands to remove any remaining dust or dirt. It is advisable to wear disposable gloves when carrying out this process. Shake off any excess water and allow to dry before returning to the machine.
Machine exterior:
Wipe under the bowls and over the exterior of the machine with a clean cloth, clean the edges of drip
trays to prevent dust build up
The back room chiller:
Clean the condenser grill on the back-room chiller using a clean dry brush. Wet, dirty or greasy brushes
must not be used as this will cause the grill to block up effecting the refrigeration system. Check BIB and replace when empty`
The dispense tap:
Ensure the dispense taps and levers are kept clean. The levers can be cleaned gently with a ‘J’ cloth and
hand-hot water. If the levers start to stick, then small amounts of hand-hot water can be poured over the levers with a jug or container held underneath to catch the water. A final wipe over with a food grade
sanitizer can be done to complete the task.
Bag in box:
When disconnecting or reconnecting a BIB, make sure you put a paper towel or a clean cloth under the connector to catch any drips. This is also a good opportunity to wash any syrup off of the removable drip tray. Clean the BIB connectors and changeover valves using hand hot water. This will help to ensure the changeover works correctly and the BIB connectors do not leak to allow easy changing of the BIBs. Clean the trays on the BIB racks.
